Ingredients
Method- 1 cup full-cream milk
- 1 t bicarbonate of soda
- 125 g brown sugar
- 1 t salt
- 250 g flour
- 1 large free-range egg
- 1 t brown vinegar
- 2 t blueberry jam
- 1 t baking powder
- custard, for serving
- berry duo, for serving For the syrup:
- 1 cup water
- 1 cup cream
- 125 g sugar
- 60 g butter
- 1 t vanilla extract
- a handful blueberries
Method
Ingredients1. Preheat the oven to 180°C. Mix the milk and bicarbonate of soda.
2. In a separate bowl, mix the sugar, salt, flour, egg, vinegar and jam. Add the milk mixture to the flour mixture and combine. Pour into 5 greased ramekins and bake for 30 minutes or until golden.
3. To make the syrup, place all the ingredients in a small saucepan and boil for 10 minutes.
4. When the puddings are cooked, poke holes into them using a skewer and pour the syrup over the pudding. Decorate with mixed berries. Serve with the custard.
Cook’s note: The malva will look quite blue when mixing, but will turn golden brown when baked. The syrup is a good way to use up berries that have gone a little past their best.

The malva is fantastic but the consistency of the syrup did not turn out well. I think the water and cream ratio did not work out as intended.
