  • 1 red onion, diced
  • 1 lemon
  • 1 x 410 g can Woolworths medium garden peas
  • 2 T vegan mayonnaise
  • Sea salt and freshly ground black pepper, to taste
  • shredded mint, for serving

1. Place the onion in a salad bowl and squeeze over the lemon juice.

2. Drain peas and add to the bowl with the mayonnaise.

3. Mix until everything is coated in the mayonnaise.

4. Serve with a generous grinding of black pepper, a pinch of salt and garnish with mint.
