Siba’s spiced Christmas cookies

Looking for a delightful dessert for Christmas that's equal parts naughty and nice, this champagne jelly will do the trick!
1. Soak the gelatine in cold water until soft, then squeeze out any excess water.
2. Gently heat the sparkling wine in a saucepan, then dissolve the gelatine in the wine. Add the sugar and whisk until dissolved.
3. Pour into greased jelly moulds or glasses and chill to set.
