Cider-glazed spareribs with apple slaw

Ingredients

Method
  • 1 kg pork spareribs, cut in half
  • For the sauce, mix:

  • 1 cup dry apple cider
  • 2 T honey
  • 2 T lemon juice
  • 2 large garlic cloves, grated
  • Sea salt and freshly ground black pepper, to taste
  • For the apple slaw:

  • 1 green apple, thinly sliced
  • 1 celery, thinly sliced
  • 2 - 3 salad onions, thinly sliced
  • 1 baby cabbage, thinly sliced
  • For the dressing, mix:

  • 1⁄3 cup buttermilk
  • 2 T thick mayonnaise
  • Lemon juice, a squeeze
  • Sea salt and freshly ground black pepper, to taste

1. Preheat the oven to 180°C. Place the ribs in a roasting pan, coated with cooking spray, in a single layer. Pour over the sauce.

2. Bake for 1 1⁄2 hours, basting occasionally, and turning once or twice, until very tender, bronzed and shiny.

3. Serve with the apple slaw and dressing.
