Ingredients
Method- 2 brinjals, sliced lengthways
- 2 T olive oil
- salt and black pepper
- 250 g Woolworths sweet chilli-flavoured cream cheese
- 2 T parsley, roughly chopped
- Baby tomatoes, quartered
- Coriander, chopped
- Half lemon, juiced
Method
IngredientsThinly slice 2 medium-sized brinjals lengthways.
Heat 2 T olive oil in a pan over a high heat. Grill the brinjal until slightly charred, remove from the pan and season with salt and black pepper.
Mix 250 g Woolworths sweet chilli-flavoured cream cheese with 2 T roughly chopped parsley.
Spoon the cream cheese into the centre of the brinjal slices and roll up.
Serve topped with a salsa of quartered baby tomatoes, chopped coriander and a drizzle of lemon juice.
feel the need to wax lyrical!!! Have made the brinjal rolls for the umpteenth time and AGAIN its such a hit! The girls came for a light lunch and have been so complimentary about YOUR brinjal rolls and OH BOY wouldn’t I just love to claim them as my own but that would not be true, so I told them subscribe to Woolies mag and you can’t go wrong!!!!!
