Rainbow chopped salad



This salad epitomises summer and makes the best of Woolies’ famed rotisserie chicken! There’s absolutely no cooking required, just a quick dish to throw together made using all the season’s loveliest produce.
Ingredients

- 600–800 g Woolworths rotisserie chicken, chopped into chunks
- 4 plums, diced
- 2 cobs sweetcorn, kernels sliced off the cob
- 100 g red salad onions, sliced
- 350 g Woolworths exotic tomatoes
- 1 x 250 g Mediterranean cucumber, diced
- 1 large carrot, peeled and diced
- 35 g Woolworths nut-and-seed sprinkle
- 40 g Woolworths baby spinach, rocket and watercress salad, washed
- sea salt and freshly ground black pepper, to taste For the dressing, whisk:
- ½ cup Woolworths carrot-and-orange juice
- 1 T wholegrain mustard
- 4 T extra virgin olive oil
- 8 g fresh coriander
- 1 bird’s-eye chilli, finely chopped
