Ingredients
Method- 2 medium brinjals
- 1 T vegetable oil
- 3 T Woolworths Asian teriyaki sauce
- 300 g Woolworths Asian inspired fully cooked rice
- sesame seeds, to serve
- spring onion, sliced, to serve
- fresh coriander, to serve
- Woolworths Asian sesame sauce, to serve
Method
Ingredients1. Preheat the oven to 220°C.
2. Halve and score the flesh side of 2 medium brinjals, drizzle with oil season. Place the scored side down on a baking tray and roast for 15 minutes.
3. Remove from the oven and reduce the heat to 200°C.
4. Turn over the brinjals and brush the scored side with Woolworths teriyaki sauce. Return to the oven for 15 minutes.
5. Brush with a final layer of sauce, then serve with rice. Sprinkle with sesame seeds, sliced spring onion and fresh coriander.
6. Drizzle with Woolworths sesame sauce for a nutty, creamy finish.
