Strawberries with pistachios and mint syrup

Ingredients

Method
  • Strawberries
  • Pistachios
  • Sugar
  • Fresh mint leaves

Pile strawberries into bowls. Scatter shelled pistachios over the fruit.
Bring a cup of sugar to the boil, stirring until clear.
Add a generous handful of fresh mint leaves and simmer for 5 to10 minutes. Strain and cool.
Pour the chilled syrup over the strawberries.
Serve thick Greek yoghurt on the side.
