How to make lemon curd (makes 1⅓ cup)

  • Whisk together ½ cup of fresh lemon juice, 2 t of lemon zest, ½ cup sugar and 3 eggs in a saucepan.
  • Stir in 6 T unsalted butter and cook over moderately low heat, whisking often, until the curd is thick.
  • Pour lemon curd into a bowl, cover with clingwrap and chill until cold. This should take around an hour.

Forget the tequila! (Or don’t. It’s up to you, really!)
