Abi’s easy kids’ brekkie ideas
How does a busy mom like Abigail Donnelly keep her kids sustained for the day? By kick-starting it with an easy, tasty breakfast (and the cutest little pretzel-ham snack you’ve ever seen).
My family and I started Banting last January and, although we are no longer as strict as we were, we have stuck to certain things. One of them is not eating cereals for breakfast any more.
My weekday breakfast used to consist of two Weetbix, but for the last year-and-a-half I have been having two boiled eggs instead.
We sometimes have a bowl of oats with a spoon of condensed milk as a treat on a Saturday morning, and the kids have smoothies that they make together on weekday mornings before school. They experiment with different yummy ingredients – by now they could write a smoothie book!
They always use fruit and yoghurt and they bulk them up with oats, sometimes a bit of Futurelife, fresh coconut shavings, chia seeds, flaxseeds, almond butter, coconut oil (delicious with bananas and almond milk) and frozen berries.
They say it keeps them full until break time, which my youngest struggles to eat every day. I concocted another idea last weekend that I will put in his lunchbox as soon as the holidays are over, too. Simply roll a few pieces of ham and thread it through a couple of baked sesame pretzels – he loves it!
