Ingredients

Method
  • 6 slices jambon ham (or proscuitto)
  • 3 cups mixed leaf salad
  • 1 cup rocket leaves
  • pumpkin, roasted
  • ½ cup raspberries
  • ⅓ cup Parmesan
  • feta, for serving
  • nut & seed sprinkle, for serving
  • pine nuts, toasted, for serving
  • Mediterranean salad dressing
  • 1 cup olive oil
  • 6 T red wine vinegar
  • cloves garlic, crushed and ¼ t salt
  • 1 t dried basil
  • 1 t dried oregano
  • 1 lemon, juiced
  • 1 t Dijon mustard

1. Preheat the oven to 180ºC.

2. Place the jambon on a baking tray and drizzle with olive oil. Bake for about 10 minutes or until crispy.

3. Place the salad leaves on a platter and top with sliced jambon.

4. Finish the salad with roasted pumpkin, raspberries, feta, Parmesan and toasted seeds and nuts.

5. Whisk the salad dressing ingredients together and drizzle over the salad. Toss all the ingredients together until well combined.
