Herb-crusted lamb chops

1. Coat the Beyond Mini Rounds™ and half of the exotic tomatoes in the olive oil and cook in an air-fryer at 180°C for 8–10 minutes, or until the mini rounds are cooked and the tomatoes are soft and blistered.
2. Fill the pitas with the lettuce, pickled peppers and olives.
3. Add the mini rounds, the cooked and fresh tomatoes and top with the red onion petals.
4. Mix the mayonnaise with the tomato pesto oil and spoon into the pitas.
