7 ideas for non-boring eggs
How do you like you eggs? Scrambled, fried, poached or in an omelette – the classics will always be winners. But sometimes you want your eggs to be a little more exciting (egg-citing if you will 😅). So for the days you’re feeling adventurous, here are 7 ways to make non-boring eggs.
1. Ladle eggs with chilli crisp
We're starting off tame. These are essentially fried eggs, but what makes them a "non-boring egg" dish is the fact that they're cooked in ladles over a fire. This method of making eggs was a happy discovery by Abigail Donnelly on a camping trip. Their supplies included a whole bunch of ladles. When it was time for breakfast, Abi handed everyone a ladle so they could cook their own eggs to their liking. To make it even more lekker, they added a bunch of toppings, too. Save this one for your next camping trip and don't forget to pack your ladles!

2. Green shakshuka with za’atar pita chips
Sure, shakshuka is a classic egg dish, but Megan Kate Swan made it more interesting by making a green version. She uses baby marrow, leeks and broccoli to make the sauce and tops it with harissa oil and labneh. Plus, she also made the easiest za’atar pita chips, so you can scoop up all the eggy green goodness.

3. Silky steamed eggs
Want to punch up the flavour of your eggs? Then you have to make steamed eggs! Eggs, chicken stock and a touch of sesame oil are combined and steamed to achieve a beautifully silky smooth texture. Clem Pedro added chilli oil and home-made togarashi seasoning to make this dish even more epic.
4. Potato chip frittata
We see The Bear's potato chip omelette and raise you Khanya Mzongwana's potato chip frittata! Think a Spanish-ish omelette, but instead of potatoes, you use your favourite potato chips! It also has plenty of cheese to make your eggs nice and indulgent.
5. Tempura eggs
Have you seen a fancier way to elevate a simple boiled egg? We haven't! And it's so easy to make. All you have to do is dip cooled boiled eggs into tempura batter and fry until perfectly golden and crispy. Abigail serves this with ponzu sauce, pickled ginger and jasmine rice, but they could also be a great appetiser at your next dinner party.

6. Eggs baked in phyllo
If you're hosting brunch rather than a dinner party, then these babies need to make it on your menu. According to Clem, baking the eggs in phyllo gives more texture and stays crisp even at room temperature. He pairs them with harissa-marinated tomatoes to make the occasion feel even more special.
7. Tiramisu pavlova
We know. Baking feels like cheating for this list, since there are no boring bakes. But since egg whites are THE main ingredient in a pavlova, we had to include one. And to amp things up a bit, we opted for Keletso Motau's showstopping tiramisu pavlova, because we love a dessert mash-up.
