- 1 cup Woolworths limited-edition Christmas roasted onion-and-parsley stuffing
- 1 free-range egg
- ½ cup water (or as needed)
- 1 free-range whole chicken
- 2 T Woolworths roast chicken seasoning
- 5 T olive oil
- 1 kg Woolworths Nicola potatoes, peeled halved
- 1 T Woolworths roast potato seasoning
- 1 lemon, halved
- 2 small butternuts, unpeeled and roughly chopped
- 2 T butter
- 1 T Woolworths roast butternut seasoning
Method
Ingredients
1 In a bowl, combine the stuffing with the egg and water, stirring until combined.
2 Preheat the oven to 200°C. Season the chicken with the roast chicken seasoning and drizzle with 3 T olive oil. Spoon the prepared stuffing into the chicken’s cavity.
3 Arrange the chicken in a roasting pan. Toss the potatoes with the remaining olive oil and roast potato seasoning, then place them around the chicken. Roast for 1 hour 15 minutes, or until the chicken is golden and the juices run clear when pierced.
4 While the chicken cooks, toss the butternut with the butter and roast butternut seasoning. Spread out on a separate tray and roast for 35–40 minutes, or until tender and caramelised.
5 Rest the chicken for 10 minutes before carving. Serve with the golden potatoes and roast butternut on the side.
