Inspired by classic Italian comfort flavours, these toasted ostrich frikkadel wraps are hearty, saucy and seriously satisfying. Juicy ostrich frikkadels simmered in a rich tomato-vodka sauce are tucked into soft sourdough wraps with melted mozzarella and basil pesto, then toasted until golden and crisp.

Ingredients

Method
  • 1 T olive oil
  • 1 x 12-pack Woolworths ostrich frikkadels
  • 1 x 350 g jar Woolworths Italian tomato-and-vodka pasta sauce
  • sea salt, to taste
  • 1 x 6-pack Woolworths Heat and Eat sourdough wraps
  • 6 T basil pesto
  • 250 g mozzarella, grated

Method

Ingredients

1. Heat olive oil in a hot pan and sear the frikkadels until browned all over. Pour over the sauce and simmer gently until the frikkadels are cooked through. Check the seasoning and season with salt, if necessary. Set aside and allow to cool slightly.

2. Spread 1 T basil pesto onto each wrap, sprinkle some cheese in the centre of the wrap, then top with the frikkadels and sauce. Top with more mozzarella before folding neatly.

3. Toast in a dry pan until crisp and golden. Serve immediately.
