Kefir is like drinking yoghurt. Kefir grains are available at health shops. Keep the grains you strain out of the mixture, as you can reuse them for your next batch. Store them in a clean, sealed jar in the fridge for up to three days.

- 4 cups milk (dairy or non-dairy)

1. Place the kefir grains in a clean 1-litre glass bottle. Pour the milk over the grains.
2. Cover the bottle’s opening with a cloth and secure with a rubber band.
3. Ferment at room temperature for 24–48 hours, tasting occasionally. Once it’s to your liking, strain out the grains.
4. Transfer the kefir to a clean 1-litre bottle and keep in the fridge for up to a week.
