Fresh, vibrant and full of crunch, this spicy apple, carrot and cucumber salad with its tangy tamarind-ginger dressing was the perfect accompaniment to the chicken, strawberry and basil rice paper rolls.
Ingredients
Method
- 1/2 cucumber, very thinly sliced
- 2 large carrots, very thinly sliced
- 4 Granny Smith apples, very thinly sliced
- coriander, to garnish
- lime wedges, for serving For the dressing, mix:
- tamarind pulp
- 4 T hot water
- 1 t Woolworths ginger paste
- 1 t Woolworths garlic paste
- 1 t chilli, chopped
- 1/2 cup rice vinegar
- 1 t sesame oil
- fish sauce
- 4 T soy sauce
- 1 T brown sugar
Method
Ingredients
1. Place the salad ingredients on a platter and drizzle with the dressing.
2. Garnish with the coriander and serve with the lime wedges.
