Fresh, vibrant and full of crunch, this spicy apple, carrot and cucumber salad with its tangy tamarind-ginger dressing was the perfect accompaniment to the chicken, strawberry and basil rice paper rolls.

Ingredients

Method
  • 1/2 cucumber, very thinly sliced
  • 2 large carrots, very thinly sliced
  • 4 Granny Smith apples, very thinly sliced
  • coriander, to garnish
  • lime wedges, for serving
  • For the dressing, mix:

  • tamarind pulp
  • 4 T hot water
  • 1 t Woolworths ginger paste
  • 1 t Woolworths garlic paste
  • 1 t chilli, chopped
  • 1/2 cup rice vinegar
  • 1 t sesame oil
  • fish sauce
  • 4 T soy sauce
  • 1 T brown sugar

Method

Ingredients

1. Place the salad ingredients on a platter and drizzle with the dressing.

2. Garnish with the coriander and serve with the lime wedges.
