Pumpkin and lamb koftas with turkish white bean salad

Turn your leftovers into legends! These pumpkin and lamb koftas with Turkish-inspired white bean salad are a delicious way to make the most of what you’ve got. It’s all about zero-waste goodness.
Ingredients

- 1 x 500 g Woolworths Free Range Lamb Mince
- 4 large baby marrow, grated
- 1 cup pumpkin or butternut, grated
- 2 cups baby spinach, roughly chopped
- 1 onion, peeled and grated
- 2 t ground cumin
- 2 t ground coriander
- 1 t Woolworths Garlic Powder
- 2 T sumac
- 15 g parsley, roughly chopped
- 4 T olive oil For the Turkish white bean salad:
- 1 red onion, finely sliced
- 4 T red wine vinegar
- 2 x 400 g Woolworths Tinned Butter Beans, drained
- 200 g large or baby tomatoes, cut into chunks
- 1 x 140 g Woolworths Babaganoush Dip, to serve
Method
Ingredients
1. Preheat the oven to 180°C. Place the Woolworths Free Range Lamb Mince in a large mixing bowl. Add the vegetables, spices, half the sumac and parsley and season to taste. Mix well and shape into koftas of about 5 cm long. Place on a baking tray.
2. Brush with a little olive oil and bake for 10–12 minutes, or until cooked through and nicely browned.
3. Start the side dish, by marinating the sliced onion in half the red wine vinegar.
4. In a bowl, lightly smash the butter beans with a fork. Heat the rest of the olive oil in a pan over high heat and fry the butter beans in batches, until slightly crispy. Place in a salad bowl and season with salt.
5. Remove the onions and mix together with the tomatoes, the rest of the sumac and parsley and a glug of olive oil.
6. Serve with Woolworths Babaganoush
