Ingredients

  • 1 red onion, sliced
  • 3 T butter, plus extra to grease
  • 2 T red wine vinegar
  • 1 T brown sugar
  • 250 g baby tomatoes, halved
  • Sea salt and freshly ground black pepper
  • 1 T oregano leaves
  • 400 g ready-made puff pastry

Method

Ingredients

Preheat the oven to 200°C.

In a pan over a medium heat, cook the onion in the butter, sugar and red wine vinegar until soft and caramelised.

Increase the heat, add the tomatoes and fry until brown. Season to taste and add half the oregano. Set aside to cool.

Grease a muffin pan with butter. Place 1 T tomato and onion mixture into each muffin cup.

Cut out circles of puff pastry using a cookie cutter and place one on top of each muffin cup. Press down the pastry to seal the edges. Bake for 15 minutes, or until golden.

Remove the tarts from the muffin pan. Turn over and sprinkle with the remaining oregano and a little black pepper before serving.

Cook's note: Woolworths sells the most incredible ready-made puff pastry - see that you always have a roll in the freezer!
