Tomatoey, cheesy, baked goodness that’ll feed the whole family (and takes less than an hour to prepare from start to finish)…there’s not much you won’t love about this tuna-and-brinjal bake.
Start by preheating the oven to 190°C. Thinly slice 2 medium-sized brinjals and brush on both sides with olive oil. Arrange in a single layer on baking sheets and bake for 15 minutes, or until tender.
Cover the base of an ovenproof dish with a thin layer of home-made pomodoro sauce or store-bought Napoletana sauce (about a ¼ cup). Cover with a layer of brinjal. Add 1 can of drained and flaked tuna and 75 g shredded mozzarella cheese. Season lightly.
Repeat this process, using a second can of tuna, until the dish is full. Sprinkle with 3-4 T grated Parmesan and moisten with olive oil. Bake for 20 minutes, or until bubbling hot.
Garnish with a handful of fresh basil.
