Corn fritter salad

1. Char the corn and cut off the kernels. Mix the flour, milk, egg, cheese, chives, baking powder and salt. Add the corn kernels and mix through.
2. Heat the oil in a saucepan over a medium heat. Drop heaped tablespoonfuls of batter into the oil. The batter should make 20 fritters. Cook in batches until golden brown and crispy and drain on kitchen paper.
3. Layer the fritters, cucumber and avocado on a serving platter and drizzle with the dressing.
