Green tea and apple ice cooler

5 minutes, plus freezing time

Ingredients

  • 2 cups green tea, cooled
  • 2 T honey
  • 2 cups pressed apple juice
  • 1 litre sparkling mineral water
  • small handful mint leaves
  • Lemon or lime, thinly sliced
  • 1 fennel stalk, trimmed

Method

Stir the honey into the tea and freeze the tea in an ice tray with a mint leaf. Freeze the apple juice in a separate tray.

Once frozen, remove and place ice cubes in a glass jug. Top with chilled mineral water. Add lemon or lime. Use the fennel as a swizzle stick.
