Roast the vegetables as per the cooking instructions. Or combine your choice of vegetables, sprinkle with olive oil and seasonings and roast at 180°C for about 40 minutes.
Place the vegetables and Parma ham on the toasted ciabatta halves, season, then drizzle with olive oil and sprinkle fresh coriander on top.
