Khajur Aur Anjeer Ladoo (date and fig balls)

30 minutes plus a couple of hours drying time

Ingredients

  • 250 ml chopped seedless dates
  • 150 ml chopped dried figs
  • 75 ml coarsely chopped pistachios
  • 75 ml coarsely chopped almonds
  • 75 ml coarsely chopped cashews
  • 25 ml sesame seeds
  • 75 ml desiccated coconut
  • 25 ml ghee or butter
  • 10 ml cardamom powder

Method

1. Place chopped dates and figs in a blender and blend for 2-3 minutes (1-2 tablespoon of water can be added if necessary). You will need to use a greased spatula to remove the date and fig mixture from the blender jug.

2. Dry-roast the nuts in a pan on medium heat for about 3-4 minutes, and remove from pan. Using the same pan, dry-roast the sesame seeds and coconut for about a minute.

3. Heat the ghee or butter in a heavy-based pot. Add the date and fig mixture and sauté for approximately 5 minutes on medium heat.

4. Now add the chopped nut, sesame seeds, desiccated coconut and cardamom powder and allow to cook till the mixture comes together, resembling a dough-like substance.

5. Remove from the heat and allow to cool before kneading the mixture.

6. Grease your palms with some ghee and roll into ping pong sized balls. Roll in powdered edible glitter and allow to dry for a couple of hours before storing in an airtight container.

7. Alternatively you can roll the mixture into a log shape, and sprinkle with powdered almonds and pistachios. Wrap in cling wrap and refrigerate for a couple of hours before slicing and serving.
