1. Preheat the oven to 220°C. Grease a 12- hole muffin pan with the butter.
2. Roll out the pastry onto a lightly floured surface. Use a 7–9 cm glass or cookie cutter to cut 12 rounds. Line the muffin pan with the pastry discs and fill each with 2–3 T pulled venison. Brush the edges with some egg.
3. Use a 5–6 cm glass or cookie cutter to cut out circles using the remaining pastry. Place on top of the pies and use a fork to crimp the top and bottom edges together. Cut a small slit in the lid of the pastry to allow the steam to escape while cooking (this will prevent the pastry from being soggy).
4. Decorate the tops of the pies with leftover pieces of pastry cut into small petals, made into a braid or a lattice pattern. Brush with the remaining egg. Alternatively, sprinkle with sesame seeds after brushing with the egg – this helps the pastry to brown beautifully.
5. Bake for 10–12 minutes, or until golden and puffed.
6. Reduce the oven’s temperature to 170°C and bake for a further 20 minutes to ensure the bottoms are cooked through.
7. Meanwhile, reduce the braai relish with the olive oil in a small saucepan. Season with a little salt and pepper. Serve with the hot pies.
