Chicken parmigiana

1. Preheat the oven to 220°C. Bash the chicken breasts to flatten evenly. Beat the egg with some seasoning. Dip the chicken into the egg, then into breadcrumbs. Fry in the oil for a few minutes on each side until golden. Drain on kitchen paper.
2. Line a baking tray with baking paper and place the chicken in the tray. Spoon over the Napoletana sauce, sprinkle with Parmesan and top with the mozzarella.
3. Bake for 12 minutes or until the cheese is melted and bubbly and the chicken just cooked and moist.
4. Serve on vegetable spaghetti or regular pasta, with the salad on the side.
