Granola loaf

Ingredients

  • 4 large free-range eggs
  • 1 cup oil
  • 100 g brown sugar
  • 1 cup Woolworths plain double-cream plain yoghurt
  • 375 g cake flour, sifted
  • 2 T baking powder
  • 200 g Woolworths strawberry-flavoured granola
  • Woolworths triple chocolate luxury granola, for sprinkling (optional)

Method

  1. Preheat the oven to 170°C. Beat together the eggs, oil and sugar. Add the yoghurt and stir to combine.
  2. Add the flour and baking powder, then mix to combine. Fold through the strawberry granola.
  3. Pour into a 21 cm loaf tin lined with baking paper, sprinkle over the triple chocolate granola, if using, and bake for 1 hour and 15 minutes, or until a skewer comes out clean. Cover with foil halfway through baking to stop the loaf from browning too quickly if necessary.
  4. Allow to cool fully before slicing and serving.

Cook’s note: Serve with generous amount of butter with a drizzle of honey or crème fraiche and cherry jam.
