1. Combine the pizza mix with the water and half the olive oil. Knead for 5–8 minutes to form a smooth dough. Place in a large lightly oiled bowl, cover with a damp cloth and allow to prove in a warm place for 20–30 minutes or until doubled in size.
2. Place the tomatoes, remaining olive oil and a pinch of salt in a small saucepan over a medium heat and reduce until sticky; about 15 minutes. Add a little water if the mixture gets too dry but carry on simmering – the longer the tomato cooks, the better! Add the oregano if using.
3. Once the dough is ready, shape it into oblong bases roughly 16 x 8 cm in size.
4. Spread 2 T tomato sauce onto each base, then sprinkle over a handful of grated cheese.
5. Top each base with a cheese griller and some of the sliced hot dog sausages, then sprinkle with the chilli flakes.
6. Bake in a preheated oven at 240–250°C until puffed, cooked through and a little charred. Reduce the oven’s temperature to 220°C and cook for a further 5 minutes if necessary.
7. Serve with the pickled red onion and fresh basil.
