Ingredients: olive oil 3T,onion, finely chopped 1,Woolworths turkey mince 500 g ,garlic, grated 2 cloves,chilli powder (or a pinch of chilli flakes) ½–1 t,ground cumin 2 t,ground coriander 2 t,sea salt and freshly ground black pepper, to taste ,chopped tomatoes 1 x 400 g can,chicken stock 1 cup,fresh coriander, for serving ,sour cream, for serving ,grated Cheddar, for serving ,extra finely chopped fresh red chilli, for serving (optional) ,For the corn-and-coriander rice: ,basmati rice 200 g,water 2cup,sweetcorn 2 cobs,fresh coriander, chopped 10-15 g,salt, to taste ,butter (optional) 1–2 T

Ingredients

500 g Woolworths free-range chicken mince
2 T olive or peanut oil
3 cloves garlic, chopped
1 lime, zested
2 T lime juice
1 T fish sauce
3 T hoisin sauce
2 t fresh mint finely chopped, plus extra to garnish
2 t coriander finely chopped
2 heads cos lettuce
1 red onion, thinly sliced
180 g green beans, blanched

Method

1 Fry the mince until brown and slightly crispy.

Add the garlic, lime zest and juice, fish and hoisin sauces and fry for a further 5 minutes.

Remove from the heat and add the mint and coriander. Serve with the lettuce, onion, beans and garnish with mint.
