- 16 large deveined, unshelled prawns
- 1 small gem lettuce, quartered
- 2 avocados, halved and peeled
- 2 limes
- Sea salt and freshly ground black pepper, to taste
- Paprika, to taste
- For the Marie Rose sauce, mix:
- ½ cup good-quality mayonnaise
- 2 T tomato sauce
- 1 T Worcestershire sauce
- 1 T lemon juice
- 1 t creamed horseradish
- Sea salt and freshly ground black pepper, to taste

- Steam the prawns in batches for 3 minutes on each side, or until firm.
- Divide the lettuce between 4 bowls and add the avocado. Top with the prawns and Marie Rose sauce. Squeeze over a little lime juice and season to taste. Sprinkle over the paprika.
