Ingredients

  • 16 large deveined, unshelled prawns
  • 1 small gem lettuce, quartered
  • 2 avocados, halved and peeled
  • 2 limes
  • Sea salt and freshly ground black pepper, to taste
  • Paprika, to taste
  • For the Marie Rose sauce, mix:
  • ½ cup good-quality mayonnaise
  • 2 T tomato sauce
  • 1 T Worcestershire sauce
  • 1 T lemon juice
  • 1 t creamed horseradish
  • Sea salt and freshly ground black pepper, to taste

Cooking Instructions

Steam the prawns in batches for 3 minutes on each side, or until firm.

Divide the lettuce between 4 bowls and add the avocado. Top with the prawns and Marie Rose sauce. Squeeze over a little lime juice and season to taste. Sprinkle over the paprika.
