Envy™ apple cake

Thinly sliced Envy™ apples make up the layers of this delicate French-style cake, with just enough batter to hold everything together. As it bakes, the apples soften into a tender, custardy centre, making every slice all about the fruit. It’s simple, elegant and a delicious way to let apples shine.

Ingredients

Method
  • 4 large Woolworths Envy™ apples halved, cored and thinly sliced
  • 1 lemon, juiced
  • 2 T butter, melted
  • 130 g sugar, plus extra to brûlée
  • ½ t sea salt
  • 3 large free-range eggs
  • 1 T vanilla paste
  • 130 g cake flour
  • ½ cup milk
  • icing sugar, for dusting (optional)
  • whipped cream, for serving (optional)
  • custard, for serving (optional)

Method

Ingredients

1. Preheat the oven to 190°C. Place the apple slices in a large bowl and gently toss with the lemon juice.
2. Whisk together the butter, sugar, salt, eggs, vanilla, flour and milk until evenly incorporated. Pour the batter over the sliced apples, then stir to ensure the apples are evenly coated.
3. Pour the batter into a 18 cm loaf tin and bake for 1 hour, or until a skewer comes out clean. Allow to cool completely in the tin.
4. Remove from the tin, sprinkle the top with sugar and brûlée using a blowtorch. Alternatively, dust with icing sugar. Slice and serve with whipped cream or custard, if using.
