Mexican cheese sandwich with banana guacamole

  • 1 banana, peeled
  • 1 avocado, skinned and pip removed
  • 1/2 red chilli
  • Juice of 1 lime
  • 1 Mexicana Pepper & Chilli cheese
  • Salt and black pepper
  • 4 slices of toasted rye bread

In a processor, blend banana, avocado, chilli and lime juice. Season with salt and pepper to taste. Spread on bread and top with sliced Mexicana cheese.
