Toasted brioche with a quick ClemenGold®️ “jam” and Boerenkaas

Ingredients

Method
  • For the jam:
  • 6 ClemenGold®️ mandarins, sliced or cut into wedges
  • 1/2 cup honey
  • 2 lemons, zested
  • 4 cardamom pods
  • 2 star anise
  • 2 cloves
  • 2 T Woolworths coconut sugar
  • For the toasted brioche:
  • 1 T butter
  • 2 slices Woolworths brioche loaf
  • Boerenkaas cheese, for serving

1. To make the jam, preheat the oven to 200°C. Place all the ingredients in a baking tray and roast for 45–60 minutes, or until sticky and golden.

2. To assemble, melt the butter in a non-stick pan and toast the brioche on both sides. Top with the Boerenkaas and ClemenGold®️ jam.
