Maple-drenched roast celeriac wedges

Preheat the oven to 180°C. Peel two celeriac, cut into eighths, then into thin wedges. Place on a roasting tray and drizzle with olive oil and maple syrup.

Season with salt and roast for 30 minutes or until soft and golden brown.

Boasting a distinct celery flavour, this root vegetable is delicious slow-roasted, mashed with a knob of butter or grated in a zingy remoulade.
