What does it take to create the “wildest cocktail in SA”?

Earlier this year, THE FORAGER went on the hunt for SA’s “Wildest Cocktail”. Their search took them to Cape Town, Johannesburg and Durban, where eight of SA’s leading bartenders competed to create the wildest cocktail in their city – and the country. The tools at their disposal? The Botanist gin and their own locally-foraged botanicals, of course. The bartenders all took part in bespoke foraging experiences in their region, led by local foraging experts, including Roushanna Gray.

THE WINNER

The winner of The Forager 2.0 was Bruce Dorfling of Luck Shaker in Umhlanga, with his “The Uncharted” cocktail (pictured above).

To recreate Bruce’s winning cocktail, see below:

Ingredients
35ml botanist gin
20ml clarified tomato juice
20ml cape sumac syrup
20ml lemon juice substitute (green tea, citric acid, mild lemon pelargonium)
5ml umami mix (Cointreau, burnt tomato skin, african wormwood, Marmite)

Method
Shake all ingredients in an ice filled shaker, fine strain into an iced glass.

Glass
Old fashioned.

Garnish
Lemon pelargonium sprig.
