Ingredients:
1/3 cup olive oil
2 t crushed garlic
Salt and pepper, to taste
1 tin of Woolworths cherry tomatoes
1 T tomato paste
Handful of pitted olives
15 g parsley
Instructions:
1. Preheat the olive oil in a medium-sized pot over a medium heat.
2. Add the garlic, and cook for a few minutes until softened.
3. Add the can of tomatoes, tomato paste, pitted olives and parsley and stir to combine. Leave to simmer together for about 15 minutes or until cooked and fragrant.
4. Check seasoning, and serve with your choice of cooked pasta.
