6 light pasta recipes to satisfy your cravings
Pasta is the weeknight staple we all turn to when we want a fast, easy supper. But on a warm day you probably won’t want to make a rich layered lasagne or decadently creamy mac ‘n’ cheese (though we won’t fault you if you do!). So we’ve rustled up six of our easiest, season-appropriate pasta recipes to help satisfy your cravings.
TAGLIATELLE WITH CARAMELISED ONION AND YOGHURT SAUCE
An easy, creamy, Ottolenghi-inspired sauce that's a comforting midweek fallback for when the fridge is almost bare.
BUTTERNUT PANSOTTI IN LEMON BUTTER SAUCE
Sage and butternut are a beautiful flavour match. Brown the butter with the sage leaves until crispy. For an aromatic twist, toast a teaspoon of cumin seeds in a pan until they release a spicy aroma. Add olive oil and a few chilli flakes, pour over the pansotti and sprinkle over toasted pumpkin seeds. Just as delicious as the original recipe.
CHILLI LINGUINE WITH BLISTERED TOMATOES
Do yourself a favour and try this bright and simple vegetarian recipe. Melt a few slices of chevin cheese through the hot pasta for a creamier result.
