Apple-and-honey-glazed gammon

Ingredients

  • ¼ cup honey
  • 225 g Woolworths handmade Granny Smith apple sauce
  • ½ cup apple cider vinegar
  • 4 T wholegrain mustard
  • ¼ cup water
  • 6 Woolworths sweetest little red or green apples
  • 6 fresh bay leaves
  • 100 g butter
  • sea salt and freshly ground black pepper, to taste
  • 1-1.5 kg Woolworths sliced smoked gammon

Method

Ingredients

1. Preheat the oven to 180°C. Place the honey, apple sauce, vinegar, mustard and water in a saucepan over a medium heat. Cook until slightly reduced.

2. Using a kebab stick, pierce a hole into the apples at the stalk. Arrange in a roasting pan, then push a bay leaf into each hole. Dot the apples with butter.

3. Spoon over the apple glaze, reserving half for the gammon. Roast for 30 minutes, or until golden and cooked through.

4. Preheat the oven’s grill. Place the gammon on a roasting tray and pour over the glaze. Place under the grill for 10–15 minutes, or until the glaze is slightly caramelised. Serve the gammon with the roast apples and extra glaze on the side.

Cook’s note: Take this dish to the next level by serving it with a wedge of Gorgonzola.
