Ramen 2.0: the spicy ‘satays-faction’ bowl

Clement Pedro says if you really put your mind to it, you could probably prepare two-minute noodles in a different way every day of the year – starting with his spicy ‘satays-faction’ bowl, of course.

THE SPICY ‘SATAYS-FACTION’ BOWL

This is honestly the best mid-week solution for minimising time spent prepping and cooking in the kitchen. In fact, this recipe requires only a couple minutes of cooking time, tops!

Ingredients

¾ cup coconut milk
1 T Thai red curry paste
2 T peanut butter
4 x 85 g Chicken Flavoured Quicksticks Noodles
1 Woolworths Medium Rotisserie Chicken, meat shredded into large chunks
2 stalks spring onions, thinly sliced
crispy onion sprinkles, for topping
1 handful coriander, roughly chopped
2 red chillies, thinly sliced

For the ‘satays-faction’ sauce, combine the coconut milk, red curry paste and peanut butter. Pour the sauce into a squeeze bottle.

Add each packet of noodles to a large bowl and prepare as per the instructions. Once done, divide the cooked noodles and their seasoned broth between 4 large bowls.

Add the shredded chicken to each bowl, and gently stir it in. Scatter the spring onions, crispy onions, chopped coriander and chillies over each bowl.

Squeeze some sauce over the noodles, and serve immediately.

Serves 4

This is guaranteed to please any heat-seeker, and it’s as fun to eat with chopsticks as it is delicious. A must-try!
