Method

  1. Beat 3 or 4 egg yolks into 2–3 T fresh orange juice, then pour into a pan over a medium heat.

    Step 1

  2. Add 130 g cold butter in little cubes, bit by bit, whisking continually until custardy.

    Step 2

  3. Remove from the heat. If it looks like it might split add a little cold cream and keep whisking!
