Puffed, golden with just the right amount of indulgence, this savoury Dutch baby is a Mother’s Day moment waiting to happen! Studded with nutty Emmental and salty coppa, it rises into a light, fluffy cloud with crispy edges and a rich, custardy centre.

- 4 large free-range eggs
- 140 g cake flour
- 1½ cups full-cream milk
- 1 T sugar
- sea salt, to taste
- 2 T butter
- 50 g Woolworths coppa
- 10 g Emmental cheese, finely grated
- Woolworths Cremezola medium-fat semi-soft blue cheese, for serving (optional)
- mixed olives, for serving (optional)
- honey, for drizzling (optional)
Method
Ingredients
- Preheat the oven to 200°C.
- Whisk together the eggs, flour, milk, sugar and salt until smooth.
- Heat the butter in a cast-iron skillet, then pour in the batter and top with the coppa and Emmental. Bake for 25 minutes or until golden and lightly puffed.
- Serve with the Cremezola, mixed olives and honey, if using.
