Rustic Golden Delicious apple-and-potato bake with bacon

Apples and potatoes are like the Michelle and Barack of autumn produce – they were just meant to be. The apples are not jarringly sweet alongside the potatoes, they’re just perfectly tender, with a honey-like flavour. It’s all tied together with thin slices of onion in between and a generous amount of seasoned cream.

- 2 cups cream
- sea salt and freshly ground black pepper, to taste
- 2 Golden Delicious apples, thinly sliced
- 3 large potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 2 thyme large sprigs, leaves picked
- 100 g Parmesan, finely grated, plus extra for serving
Method
Ingredients
1. Preheat the oven to 190°C. Pour the cream in a bowl and season very well with salt and pepper. Toss the apple and potato slices in the seasoned cream.
2. Grease a 20 x 15 cm baking dish with butter and arrange apple, potato and onion in alternating layers. You’ll probably be able to fit two rows in a smaller dish.
3. Pour over the cream and scatter with thyme. Sprinkle the Parmesan on and bake for 30 minutes, or until a knife pierces the potato easily. Serve warm sprinkled with extra Parmesan.
