Beef flank with creamy mash and honeyed asparagus

Woolworths Slow Cooked Beef Flank Roast is the MVP you need for Sunday roast in 30 minutes, or less! Serve it with your favourite side – we went for frozen mashed potato for added convenience and butter-poached asparagus because butter makes everything better.

Ingredients

Method
  • 1 x 1.2 kg Woolworths slow-cooked beef flank roast with onion gravy
  • 1 kg Woolworths frozen mashed potato
  • 2 cups full-cream milk
  • sea salt and freshly ground black pepper, to taste
  • 2 x 150 g Woolworths asparagus, trimmed
  • ½ cup water
  • 2 T salted butter
  • 1 Tbsp honey
  • Juice of one lemon

Method

Ingredients
  1. Place the beef flank in a preheated air fryer basket of 180°C for 20–30 minutes, or until warmed through.
  2. Melt the mashed potato in a large pot over medium heat, along with the milk, for 10–15 minutes, stirring every minute, or until completely thawed and hot. Season well with salt and pepper.
  3. Pop the asparagus in a saucepan, over high heat, with the water and butter. Poach the asparagus until the water has fully evaporated.
  4. Season with a little salt, pepper and honey.
  5. Dress with a squeeze of lemon juice just before serving.
  6. Spoon the mash into large bowls and top with tender, thick slices of beef flank.
