Inspired by the iconic Cape Town street food legend, these mini gatsbys pack serious flavour into every bite. Juicy sirloin, fiery peri-peri sauce, Cajun waffle fries and a runny fried egg piled high – this is a sandwich that means business.

Ingredients

Method
  • 400 g sirloin steak
  • 1 T olive oil
  • sea salt and freshly ground black pepper, to taste
  • 4 Woolworths white mini loaves
  • 4 T mayonnaise
  • 2 tomatoes, thinly sliced
  • 4 T peri-peri sauce
  • 400 g Woolworths waffle fries, deep-fried and seasoned
  • 2 t Cajun seasoning
  • 4 free-range eggs, fried

Method

Ingredients

1. Drizzle the sirloin with olive oil and season. Cook to your preference in a hot pan. Rest, then slice into strips.

2. Slice each mini loaf in half lengthways. Spread 1 T mayonnaise onto each base. Layer the sliced tomatoes onto the mayonnaise, followed by the sirloin. Drizzle a generous amount of peri-peri sauce over the steak.

3. Pile on the waffle fries, then top each with a fried egg.

4. Add the top halves of the loaves and serve immediately.

Cook’s note: For an authentic gatsby experience, don't hold back on the peri-peri sauce! You can swap sirloin for chicken or polony for a more traditional take.
