Mafaldine pasta with lemon-and-basil pesto

Fresh, vibrant and ready in minutes, this simple pasta is all about letting a good-quality pesto do the work. Finished with Parmesan and a splash of reserved pasta water, it creates a silky, glossy sauce that clings beautifully to every ribbon of mafaldine.

  • 500 g Woolworths mafaldine pasta 
  • 1 x 190 g jar Woolworths lemon-and-basil pesto
  • 50 g Parmigiano Reggiano, finely grated, plus extra for serving

Method

Ingredients

1. Cook the pasta according to package instructions until al dente. Reserve ½ cup of the pasta cooking water before draining.

2. Return the drained pasta to the pan. Add the pesto, 2 T reserved pasta water and the grated Parmesan.

3. Toss until the Parmesan has melted and the sauce is smooth and creamy, adding a little more pasta water if necessary to loosen the sauce.
Divide between serving bowls and sprinkle with extra grated Parmesan.
