Beyond™ mince curried koftas with curry leaf mayo

These easy koftas are brimming with bold flavours and smoky notes from the braai. Add a tasty vegan curry leaf mayo and you’ve got yourself a feast.

Ingredients

  • 500 g Woolworths Beyond™ mince
  • 2 T mild curry powder
  • 1-2 T psyllium husk
  • 60 g chickpea flour
  • 1 T golden flaxseed powder
  • curry leaves, deep-fried, for serving
  • fresh parsley, for serving
  • fresh mint, for serving
  • fresh dill, for serving
  • vegetable or mango atchar, for serving
  • For the curry leaf mayo

  • ¼ cup Woolworths vegan mayonnaise
  • 1 sprig curry leaves, picked
  • 1 t mild curry powder

Method

Ingredients

1. Combine the Beyond mince, curry powder, psyllium husk, chickpea flour and flaxseed powder. Season and mix until well combined.
2. Divide the mixture into 8–10 portions and shape firmly around metal skewers to form long koftas.
3. Heat a flat griddle pan over medium coals until hot. Drizzle with the olive oil and place the koftas on the grill, pressing them down to flatten slightly. Cook, turning often, until browned and cooked through.
4. To make the curry leaf mayo, blend the mayonnaise, curry leaves and curry powder until smooth.
5. To serve, spread the curry-leaf mayo onto a serving platter and arrange the koftas on top.
6. Toss the crispy curry leaves with the parsley, mint and dill and scatter over the koftas. Spoon over the atchar and serve immediately.
