Add some colour to your plate with delicious rainbow trout

By TASTE, 31 July 2020

Tired of all those bredies and casseroles? In the mood for something fresh and uplifting? Bring some colour and vibrancy to your plate with delicious rainbow trout from Woolies.

After so many bredies, pasta dinners and comforting casseroles, you might be in the mood for something light and fragrant – like Woolworths’ farmed rainbow trout, which is raised in the pristine waters of the Lesotho Highlands.

The quality of the water, combined with nutritionally balanced feed and sustainable farming methods, produce a melt-in-the-mouth, tender fish. Enjoy it roasted with seasonal veg, or try something new, like a flavourful Asian noodle bowl.

Pan-fry the rainbowtrout skin side down in 1 T sesame oil over a high heat. Once crispy, turn over. Turn off the heat and deglaze the pan with 4 T soya sauce and 1 T honey. Place cooked noodles in 2 bowls. Flake over the crispy trout and add julienne carrots, edamame beans, sliced radish, sliced spring onions, red chilli, nori, basil, mint and a squeeze of lime. Serve with pickled ginger.

If you're looking for more fresh ideas with rainbow trout, this trout buddha bowl with a butter-bean dressing is sure to hit the spot. And if you'd really like to knock the lights out, this trout gravlax with yoghurt-and-cucumber dressing is something very special ...
