Woolies’ ratatouille recipe

Does anyone have the recipe for the fabulous ratatouille which Woolies uses to fill their butternut halves with?

    I have not tasted the Woolies filled butternut halves but I can say that even ratatouille “haters” that I have served Yottam Ottolenghi’s ~Tamara’s Ratatouille have been converted. I found the recipe in his cook book “Plenty” but found a version on the web here (https://foodforhealth.kaiserpermanente.org/recipes/tamaras-ratatouille-from-plenty/) if you do not have the cook book. We serve it for lunch and supper either topped with greek yoghurt or feta and fresh coriander.
