This easy 3-course menu is perfect for midweek entertaining

We’ve got the perfect 3-course menu for an easy midweek meal you can whip up in no time. So get ready to invite the friends and family round and make those ordinary moments extraordinary!

THE RECIPES

Appletiser Ceviche
Thinly slice a side of white fish (kingklip/yellow tail) and place in a mixing bowl. Add fresh lime juice, half a red onion, a finely chopped chilli, 1t of finely grated fresh ginger, coriander and top with Appletiser. Allow to stand for 5 minutes. Serve the ceviche on thinly sliced watermelon, fennel shavings and a wedge of lime.

Tagliatelle with chilli and Parmesan
Cook 250g of fresh tagliatelle pasta in salted, boiling water until al dente. Meanwhile, melt half a cup of butter in a pan until bubbling. Add 4 finely chopped garlic cloves and a finely chopped chilli and cook for a few seconds. Mix through 3T of Italian parsley and fold through the drained, cooked pasta. Sprinkle 3T of Parmesan and a generous amount of freshly ground black pepper.

Poached peaches and sorbet
Score an ‘x’ on the under side of the peaches. Add 200 g brown sugar, a few star anise cloves and a cinnamon stick to a saucepan. Top with Appletiser and bring to the boil. Reduce the heat to a simmer and add the peaches. Allow to poach for 5 minutes, or until the skins can be peeled off easily. Place the sugar water back on the stove and add more brown sugar. Bring to the boil and reduce until a syrupy consistency. Pour a little syrup over the peaches and serve with scoops of lemon sorbet or vanilla ice cream and crushed, cashew nut brittle.
